Simple Crawfish Sausage Ratatouille from Eating Well To Fight Arthritis

Presto! Toss together sausage, squash, tomatoes, Italian seasonings and pasta for an outstanding dinner. The nutritional analysis is not with crawfish but I added it to the recipe and wow, it was delicious.  Think about adding crawfish to your favorite recipes.

Makes 4 (1 3/4-cup) servings

8 ounces penne pasta
16 ounces chicken sausage, diced
2 cups coarsely chopped zucchini
2 cups coarsely chopped yellow squash
2 cups chopped onion
1 tablespoon minced garlic
1/2 cup low sodium fat-free chicken broth
2 cups chopped tomatoes
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves

1 (1-pound) crawfish tails, drained and rinsed
1. Cook pasta according to package directions. Drain and set aside.
2. In nonstick skillet, cook sausage over medium heat until browned, stirring. Add zucchini, squash, onion and garlic; sauté 5 minutes. Add broth, cooking until liquid is almost reduced.
3. Add tomatoes, oregano and basil, and cook until tomatoes tender. Stir in crawfish. Serve over pasta.
