1 lg. onion, chopped

1 green bell pepper, chopped

1/2 c. chopped green onions

1 stick butter

 2 cans whole kernel corn, drained

1 can cream style corn

1 can Ro-Tel tomatoes, chopped

1 lb. Louisiana crawfish tailmeat

Salt & pepper taste

Saute’ onion bell pepper and green onions in butter. Add corn and tomatoes. Simmer for 5 minutes. Add crawfish and seasonings and simmer for 20-30 minutes. Serves 8.
